Serves: 2
4 mushrooms, sliced
1/2 onion, chopped
1/2 green or red bell pepper, diced
3 tablespoon red curry paste
1 can coconut milk (or cream)
1 tbsp fish sauce
1 cup rice
1/2 cooked chicken
2 tbsp oil
Add oil, curry paste, vegetables to pot. Cook for 5-7 minutes. Add in chicken, cook an additional 2 minutes. Add coconut milk and fish sauce. Simmer over low heat until rice is ready.
Add 1 cup of rice and 2 cups of water to a large bowl. Microwave for 15 minutes on high.
Serve curry over rice.
