2 purple Asian shallots, peeled
1/4 bunch Thai basil
1/4 bunch mint
2 tsp finely grated lime rind
600 g minced chicken
1 egg yolk
3 tbsp red curry paste
1/2 sweet chili sauce
Preheat oven to 180C. Finely chop shallots, coarsely chop basil and mint. Combine shallots, mint, basil, lime rind, chicken, egg yolk and curry paste in a medium bowl. Season to taste with salt and pepper. Divide mixture into 12 patties, cook in pan for 3 minutes each side or until brown.Bake in oven for 8 minutes. Drizzle patties with sweet chili sauce and serve.
**I've never made this before but I think the "12 patties" are quite small which is why it serves 4 people. This may require some trial and error.
