Lime Marinated Chicken "Mexican Chicken"
Marinade:
1 lime
1⁄2 cup corriander paste
1⁄4 cup olive oil
1 to 2 jalapeño peppers, trimmed and sliced
2 teaspoons tomato paste
4 cloves garlic, chopped
Pinch salt
2 chicken breasts, sliced in half lengthwise
1. For marinade, combine squeezed juice from the lime with remaining marinade ingredients; Pour marinade over the chicken and toss to coat. Cover with aluminium foil and refrigerate overnight.
2. Bake covered at 180 C for 45 minutes.
3.) Top the chicken with freshly made guacamole and serve.
