Snickerdoodles

2 c. all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
1/2 lb. unsalted butter, melted and cooled to room temp
1 1/2 c. sugar
2 large eggs
1/4 c. sugar
4 tsp ground cinnamon

Preheat oven to 350 degrees. In a medium bowl sift together dry ingredients and set aside. In the bowl of a mixer, beat sugar into butter on medium speed until fluffy. Beat in eggs one at a time. Stir in flour mixture until well blended and smooth. In bowl from dry ingredients, mix together remaining sugar and ground cinnamon. Shape dough into generous 1-1/4 in balls between palms. Roll prepared dough in sugar mixture and place on prepared cookie sheets about 2 1/2 in. apart. Bake about 10 minutes (tops will brown a bit and cracks will look a little undercooked) and remove from oven. Let cookies cool on sheets until slightly firm (about 10 mins). Remove from cookie sheet and let cool thoroughly on wire rack.
